Slide on over, whiskey lovers. There’s a new bottle at the bar. Made from traditional, organic corn, or maíz, grown the same exact way for millennia. In the highlands of Oaxaca, Mexico, subsistence farmers have teamed up with a start-up distillery called Maíz Nation. The partnership is producing a top-shelf liquor, helping the local economy, and keeping Mexico’s many unique corn varieties safe.
